Homemade soy milk is an alternative to cow milk, very cheap and easy to make.
INGREDIENTS:
1/2 cup yellow soybeans ( 80grams)
4 cups water ( 1 litre)
1/2 teaspoon of vanilla extract (optional)
METHOD
-Soak the soybeans with water overnight for at least 12 hours.
- Drain the soybeans and remove the outer skin.
- Blend the soybeans with 3 cups of water ( 750 ml) until it's well blended and almost smooth.
- Strain the mixture with cheesecloth, a napkin or a strainer.
- Pour the mixture in a saucepan and add 1 cup of water ( 250ml). Place it on a stove over a high heat and bring to boil. Stir and skim foam. At this point cook over medium heat and continue stirring for 20 minutes.
- Add your vanilla extract and stir very well. Let it cool and pour in a container and store in the fridge . Consume within 4-5 days.
